Heritage bakery and restaurant — Silay’s oldest bakery, operating since 1920 at the same Rizal Street address, founded by Cesar Lacson-Locsin and his sisters and still run by the 3rd and 4th generation of the family. Best known for guapple pie, a guava-apple pie invented in the 1980s when the Negros sugar crisis made sugar too expensive for traditional pastries and farmers switched to growing guapple (a Vietnamese guava variety) — a dish that literally encodes the island’s sugar-industry history. Also sells buko pie, egg pie, cassava cake, dulce gatas (carabao-milk pastillas), lumpiang ubod, piaya, barquillos, broas, and silog breakfasts. The go-to pasalubong stop in Silay, about 10 minutes from Bacolod-Silay Airport and a short walk from Balay Negrense. Note reviews split on sweetness — some find the pastries less sweet than expected. Roughly 0.1km (2 min walk) from Silay Public Plaza / heritage zone.
