Farming outside the sugar estates is smallholder and mixed — vegetables, root crops, fruit and cacao often on the same land. Upland farms supply the lowland city markets, which is why highland towns matter far beyond their size. Roadside stalls near the farms sell at the lowest prices you’ll find.

Where cane gives way to fruit and vegetables as the land rises — the market reflects that mix better than either a lowland or a highland market alone. Mag-aso Falls is the usual pairing.
