Description

Coconut vinegar production in the mid-west coast barangays. In Himamaylan, a mid-west coast city between cane country and the sea. Native suka is fermented from coconut sap or tuba, and it’s the backbone of the cooking here — adobo, kinilaw, and the dip for grilled fish all depend on it. Backyard producers bottle it in reused containers and sell at roadside stalls and the town market. It’s cloudy rather than clear, and sharper than anything commercial.

A working city on the southern highway rather than a destination — a reasonable meal and market stop when driving between Bacolod and Kabankalan, not a detour worth making on its own.
