Description
Cassava and camote farms in rural barangays. In Sipalay, the southwest beach and dive town, where the catch goes straight to roadside grills. Cassava, camote, gabi and ube are the fallback staple in the uplands here — boiled as merienda, and the base of kakanin and budbud. Native siling labuyo grows in backyards rather than fields: small, fiercely hot, sold by the heap in the market.
Tips
Grills are lit late afternoon and evening; going at midday misses the point entirely. It"s a 4-5 hour drive from Bacolod, so plan an overnight rather than a day trip.
