Description
Muscovado production in the Kabankalan upland barangays. In Kabankalan, the main city of the southern interior, a hub for the whole southwest. Muscovado is whole-cane sugar boiled down and dried with the molasses left in — brown, damp, faintly smoky, nothing like refined white. Producers here work in open pans at small scale. Buy it in blocks or loose by the kilo where it’s made; it costs more than white sugar and is worth the difference.
Tips
The supply hub for the whole southwest — if you"re travelling the western corridor, this is the one market worth timing your day around. The eatery zone around the market is where to eat, not the highway strip.
