Description
Sugar mill and processing zone in La Carlota — one of the key mills of the central Occidental corridor. In La Carlota, an inland mill town at the foot of Kanlaon. Muscovado is whole-cane sugar boiled down and dried with the molasses left in — brown, damp, faintly smoky, nothing like refined white. Producers here work in open pans at small scale. Buy it in blocks or loose by the kilo where it’s made; it costs more than white sugar and is worth the difference.
Tips
A mill town rather than a market town — the interest is the sugar landscape and the Kanlaon western trailheads beyond it, not the town centre itself.
