Description

Open-air chicken inasal dining complex (a cluster of stalls, not a single restaurant) — Bacolod’s famous chicken inasal row on Father Mauricio Ferrero Street, across from SM City Bacolod, defining the city’s signature dish since the early 1980s (built under then-mayor Jose Montalvo Jr. to relocate street-side chicken grillers). Chicken inasal is grilled chicken marinated in calamansi, pepper, coconut vinegar, and annatto seeds — the annatto gives it a distinctive orange hue — served with garlic rice and a calamansi-chili-vinegar dip. CURRENT STATUS (time-sensitive): the original building was demolished in February 2025 as part of a ₱4-billion, 40-year redevelopment deal with SM Prime Holdings. All 24 original tenant stalls relocated to temporary stands at the SM City Bacolod transport terminal hub, directly across from the original site, where they’re currently operating. The new permanent building is under construction on the same lot, targeted for completion later in 2026.
