Description

Coconut vinegar production in Siaton coastal and upland barangays. In Siaton, the southernmost town of Negros Oriental, coastal and upland at once. Native suka is fermented from coconut sap or tuba, and it’s the backbone of the cooking here — adobo, kinilaw, and the dip for grilled fish all depend on it. Backyard producers bottle it in reused containers and sell at roadside stalls and the town market. It’s cloudy rather than clear, and sharper than anything commercial.

Tips
Coastal and upland production sit far apart in the same municipality; pick one or the other for a half day rather than trying to cover both. Cassava drying slabs are roadside and visible without needing to stop.
